Greek Pita Bowls
Makes 5 Meals
Ingredients:
-1-2LB's chicken
-2 Roma Tomatoes
-1 medium red onion
-1 cucumber
-feta cheese (for crumbling)
-tzatziki
-oregano, dill, salt & pepper (for chicken). No measurements here, just season until it feels right.
-1 Tablespoon of olive oil
-splash of lemon juice
-2 cups of cooked rice. We like to add a bit of tumeric and a bay leaf when cooking the rice but that's not necessary!
Directions:
Dice up the chicken into small cubes and add to a large bowl. Season with olive oil, oregano, dill, salt & pepper. Toss to coat. Cook chicken. (we like to save time and cook it in an air fryer!)
While chicken cooks, dice up the roma tomatoes, red onion and cucumber into a small bowl. Add a splash of lemon juice. Toss to coat.
Line up your meal prep containers. Evenly divide the rice into containers. Evenly divide cooked chicken into containers. Even divide diced veggies into containers. Crumble feta cheese on top of each container. Add a dollop of tzaziki to each. If you'll be refrigerating these immediately after dividing into containers, we like to add the tzatziki in a separate smaller container so it doesn't get re-heated.
